Studies have shown that many microgreen varieties, including red cabbage, broccoli and radish, can contain up to forty times more nutrients than a mature plant, including vitamin C, E and K as well as antioxidants. Dr. Gene Lester, a researcher from the United States Department of Agriculture (USDA), has stated that all of these nutrients are very important for the skin and the eyes as well as for the fight against cancer, and that it is amazing to find so many nutrients in a single food item. Last but not least, microgreens contain few carbohydrates, but have a phenomenal taste.
